We continue to honor Women’s History Month with more great recipes from Women’s Bean Project, on special in our store through the month of March.

On the back of pack of Women’s Bean Project Original Salsa Mix, you can find a recipe for tacos using 1 pound of ground beef. We’ve done this before, but our favorite recipe using any of Women’s Bean Project salsas is chicken fajitas, more  and less fat.

For a mild home made fajita night follow these directions.

Ingredients:
1 packet of Women’s Bean Project Original Salsa Mix
1 pound of chicken tenderloin (you can use chicken breast as well, but tenderloin is naturally… well, more tender)
1 green bell pepper
Corn of flour tortillas
Shredded Mexican cheese
Shredded lettuce
diced tomatoes
sour cream and/or guacamole (see guacamole recipe)

Directions:
Cut chicken tenderloin into strips and grill in a pan using just a little canola oil. Chop or strip bell pepper and add to still cooking chicken. Before chicken and pepper are completely cooked, add packet of Women’s Bean Project Original Salsa and stir in 1/4 cup of water. Mix ingredients until water is cooked away.

Serve on flour tortillas with plenty of shredded lettuce, cheese, diced tomatoes, sour cream and guacamole to pile on.
